This is a great representation of what Knob Creek fans have come to love about this label. The familiar essence of toffee, marzipan, maple, and New York street-style honey roasted peanuts is front-and-center on the nose. The mouthfeel is thick and creamy, with notes of baking spice up front that then open up to rich vanilla and crisp red apples, with hints of marshmallow, butter, peanut brittle, and a dash of white pepper. The finish is long, with lingering notes of pralines and malted chocolate, and a pleasingly-rich vanilla sweetness. The 9 years and 9 months this spent in new charred American oak has really tamed the brashness often found in a 120 proof bourbon, leaving only the sweet and bold flavors that makes Knob Creek so loved.
